Fourth Investment, Days 3-7


Prepping for the final event took up so much time, I neglected to blog - so as a recap:

Day 3:


Breakfast - the usual
Lunch - Vegetarian sushi from Piedmont Market
Dinner - pasta with tomatoes, potatoes, broccoli, and white beans.

Day 4:


Breakfast - again, the usual
Lunch - baguette with hummus, roasted corn and pepper soup
Dinner - leftovers from Day 3

Day 5:


Breakfast - out of cereal - so baguette with peanut butter, blueberries
Lunch - Had to clear out the fridge to make room for the groceries for the final event dinner, so, leftovers and leftovers
Dinner - on the go to a friend's opening - baguette with hummus.

Day 6:

...was the final dinner event! So breakfast, and a day of prep. Stayed tuned for the final video.



Day 7:



Woke up late...
Brunch - divine leftovers! Brown and wild rice, roasted zucchini
Dinner - salad - beets, mixed greens walnuts, grapes, maple-miso vinagrette....

Now on to video editing.

Fourth investment, days 1-2



This week is the final investment - and Friday will be the final, cumulative event. But leading up to it...

Day 1:


I'm a pretty simple person when it comes to breakfast. Here is the usual.


Lunch - corn and roasted pepper soup, a sandwich with edamame hummus and soy cheese.


Dinner - vegetable curry from Vegan and Tikka Masala! Yum!

Day 2:


Same old, same old.


Lunch - leftovers from last night's dinner.


Dinner - pasta with roasted tomatoes, potatoes, broccoli, white beans.

Third Investment, Days 3-7



My week spiraled out of control, with barely time to think, let along blog. So it became easier to group everything together for a big post here.

Day 3:


Skipped breakfast, lunch was a peanut butter sandwich that I forgot to document. Dinner was rice with spinach and red beans.

Day 4:


Again, no time for breakfast, lunch was leftover rice from Day 3, and dinner was a felafel from a Greek dinner on Kearney.

Day 5:


No breakfast, lunch was pretzels and hummus.


More leftover rice for dinner.

Day 6:


Breakfast was a meeting at the Hyatt Regency for SGC San Francisco, mostly fruit, and some pastries, no documentation. Lunch was leftover rice. Dinner was a salad from the Fremont Dinner with friends - barely any vegetarian options there, let along vegan.

Day 7:


Finally had time to eat breakfast! Just cereal and almond milk, but something!


Lunch was an eggplant and roasted pepper sandwich from Ferrari Foods on Piedmont.


Dinner was a hummus and tomato sandwich.

Phew! What a week!

Third Investment, Day 2



Barely time to eat today - only managed to get two meals in. Both leftovers.


Leftover pasta for lunch.


And leftover pasta - dressed up with spinach and peas - for dinner! I think what ends up getting me down on this project more than anything is the realization that I have so little time for things like cooking and eating. When I envisioned this, I had hopes of making wonderful vegan meals (I know these are possible), but everything I do now is so rushed.

Third Investment, Day 1



I've changed jobs, and now get up so early that I usually can't handle breakfast. At least, not for a bit. So I ended up scarfing down a few of these as a substitute - vegan olive oil banana cookies.


Lunch - salad, homemade vinaigrette, apple.


I was feeling the call of carbs by the time I got home - so dinner, whole wheat pasta, homemade sauce from leeks, mushrooms, and canned tomatoes. And wine.

Second Investment, Day 7



Slept in, so breakfast - peanut butter toast! - was more of a brunch.


And "lunch" was more of an early dinner with Tracey! From the taco truck near her studio - a veggie burrito - rice, beans, carrots, radishes, onions, cilantro, lettuce.

Peanut butter toast for breakfast!


Another amazing salad - arugula and kale from the garden, tomatoes and plums from the farmers' market, broccoli and nuts.


Penne and vegan puttanesca for dinner.
